
We love a prawn salad, and this one specifically is really new and dynamic. The serving of mixed greens is loaded with prawns, courgette strips, avo, lettuce, watercress and new spices – and finished off with a heavenly sun-dried tomato and basil dressing.

Fixings
For the dressing
150 g sundried tomatoes in oil
10 g basil
250 ml water
1 tbsp. red wine vinegar
1/2 tsp. salt
2 tsp. honey
1/2 tsp. onion powder
1/2 tsp. garlic powder
20 ml olive oil
For the plate of mixed greens
1 little pearl lettuce, leaves isolated
100 g watercress
15 g basil leaves, tore
10 g generally cleaved parsley
20 g cleaved coriander
1 courgette, bested and followed, ribboned
1 avocado, cubed
300 g cooked lord prawns

Bearings
Stage 1
Make the dressing: In a blender, consolidate all fixings with the exception of olive oil. Barrage until smooth. Move to a bowl pour in olive oil and mix to join. Put away.
