The prize for this awesome steamed egg dish, smooth and exquisite, will appear to be excessively high for the work. Suggestive of Chinese zheng shui dan, Japanese chawanmushi and Korean gyeran jjim, this smoothed out recipe cooks altogether in the microwave. The way in to that ideal, delicate set wibble-wobble surface (think smooth tofu) is utilizing your microwave at around 500 watts — or a portion of its power on a 1,000-watt machine. This lower heat lets the eggs and stock steam together delicately until they connect into something ethereal, existing somewhere close to fluid and strong. More slurpable than enjoyable, it tastes fabulous as a light starter or breakfast all alone, or for lunch or supper close by steamed rice and different dishes to finish the spread.
